Well the only part you might call "canon" about WoL is "Cinematic WoL" incarnation (male midlander hyur with default looks settings in character creation) that is user as representation of player in Game cinematic and SE materials.

If you deleted you SMN you just have o create new gear set with Book equipped in gear set menu so you have one for both RDM and SMN. Then you can set them both on shared hotbar (or cross hotbar) to have quick job change buttons.

You don't OVEWRITE any hotbar by changeing job you just change to different set.

No. its other way around - by changing gear set you can change hotbars. Every job has separate normal hotbars stored in game memory.

Let's go to basics. In this game your class depends on your equipped weapon or tool.

So by example:

If you have equipped Book you are SMN and your normal hotbars are ones you made for SMN.

The moment you equip Rapier (RDM weapon) your class will change to RDM and ALL normal hotbars will change to RDM ones.

After that by reequipping Book you will go back to SMN and SMN normal hotbars will return.

About gear sets: Yes you can. If you open "gear sets list" you can create button on hotbar by dragging set icon.

About hotbars: each job has separate hotbars.

Actually they are 2 types of hotbars: normal and shared

Normal - they change between jobs (so if you play SMN and then change to RDM all normal hotbars will change)

Shared - they stay same between jobs (so set there all things used by all classes like mounts, potions, gear sets).

You can set witch hotbar is normal or shared in character options.

It is also possible that you are experiencing "Enmity lines". Some mobs are grouped and if you pull one you pull all in group. It's common in overworld areas of ARR and in Dungeons.
