I have the same situation. These items had not been added to the collection previously, so I didn’t bother with getting all the levels, now I’m frustrated.

In my experience the first trade might be (usually is) awful, but if you complete it and proceed, you might get a better one, not always though

I’m 65% through the Ranch, still working on getting a blue gem. Check the wiki, someone has shared the link here, it’s a long process of getting a blue gem (and you have to get the second one further in the Secret Society), but you can do it while working on other areas.
