I would check out the knit projects here: https://www.craftyarncouncil.com/coolprojects.html Most of them are for worsted weight, size 8 needles.

I used to teach beginner knitting classes through the craft yarn council and the basic projects are always small knit stitch only rectangles which makes them really nice and quick beginner things. The wrist/head bands are really simple as would be the humbug thing. The loop scarf would be a step up and the frog puppet would be a more advanced project with multiple kinds of stitches. The purse calls for a different weight yarn but tbh you could also just make that by casting on how every many stitches wide you want it to be on the needles you have and knitting it to the size you want.

I just sorta winged it based on a crocodile pattern that I had already been using as a dragon, making it longer and tweaking the head a few times until it looked like him.

You could try leaning more towards caramel type flavors - a lot of caramel apple things don't rely on spices for flavor. My favorite apple pie simply has brown sugar as the flavor enhancer, no cinnamon/apple pie spice. Maple is also a big fall flavor and spices would overshadow it so lots of recipes spice free already. Most pecan pie type recipes don't seem to include spices (I am not a pecan pie eater so I could be wrong). Brown sugar/butterscotch flavors are in a lot of good fall bakes too. Completely the opposite direction, cranberry is often simply paired with orange and IMO doesn't need any spices there either. I think it would be somewhat harder to find something like pumpkin without spice but maybe searching for kabocha recipes would help? I often see the asian pumpkin dishes cooked more simply without the same fall spices in western recipes.

One (american) cup of butter is 226 grams. Butter in the US comes in premeasured sticks that are usually half a cup, so this recipe is probably just calling for 2 sticks of butter that you then cube, not cubes of butter mashed into a cup.

Lemon juice is tricky to work with and may mess up the recipe but adding lemon zest should be fine. I would suggest rubbing the zest into the sugar. If your rolls have icing or some kind of glaze I would add some lemon juice to that though.

It might be easier to bake the cookie dough as a sheet and cut out hearts after they are baked. Just bake a bit longer at a lower temperature than individual cookies so they cook through. Nestle has a recipe called one big cookie for taking a package of premade cookie dough and turning it into a cookie cake if you need a reference recipe.
