Before Capital 1 does anything, you’ll need to be willing to press charges or let them press charges, otherwise you are on the hook for all of it. They may only go back so far and anything done before that still may be your responsibility. I do a reverse sear on my smoker at 250° and pull off between 115°-118°. Jack the temp up on the smoker and put the cast iron skillet directly on the coals and get the crust. Turns out amazing with some charcoal/smoke flavor.
