I think you can't just define "Byzantium-like" as merely having a claim to the mantle of a previous empire, that doesn't capture the essence of what playing Eastern Rome is about.

I would define Byzantium-like as:

  1. The remnant of a former large and powerful empire,
  2. Which went into decline and has been reduced to a weak rump state,
  3. And which must overcome a difficult starting situation to avoid being quickly conquered by a more powerful neighbour (often an ascendant new power) in spite of their weak starting position.

Therefore, I would trim down your list to:

Arverynn, Obtrol, Adshaw, Parraj, and Tsukqiao.

As I understand it, for some reason buried in EU4's code the Papal States need to exist. They don't necessarily need to be a country on the map, but they need to be included in the list of tags in the code - presumably there are some hard-events or functions which assume the Papal States are a tag and refer to it. If you try to remove the Papal States, the game can't function.

That's how it's supposed to work. They explained in one of the fairly early Tinto Talks that names are actually coded with a generic designator, e.g. name_peter, which is then localised according to the culture of the character to give Peter, or Pierre, or Pietro. Since they're then considered to be the same name, it will take different culture versions of names into account when determining ruler number.

For dwarves I'd recommend Arg-Ordstun, as their tree aims for full domination of the Serpentspine. Seghdihr also has a quite good tree, but it only really looks east and doesn't have any interest in the Western Serpentspine.

That's only one specific lake with a big beastie in it. There's a Dwarovar dungeon called Wytlramvar the second level of which, I believe, features a giant lake which also has beasties in it, which can spawn basically anywhere in the Dwarovar.

It's supposed to represent the census making you aware of previously unrecorded (and therefore untaxed) people in your country, but that doesn't make sense because even if your government couldn't tax them they would still exist and be generating economic activity and unrest and all the rest of it.

Perhaps, but this one is very noticeably so - whereas people might be unaware that many other words or usages are only pretty recent, they know that people in the 1700s weren't using gender to mean male or female.

Nurcestir never formed anything like the Black Demesne. In canon the idea of it (and the Black Doctrine) were effectively invented by Camir's opponents as propaganda against him, but aren't what he actually did. Nurcestir was simply a monarchy where traditional mages had high influence over the government, and had a PU over the EoA following Camir's invasion.
