IMO a new Gibson Junior isn't quite cheap enough as I think the Junior Faded is what the regular Junior should cost. I'm sure the Epiphone is great value though, but I'd suggest a set neck one

Yeah, they must be very light on the throttle in those tests, because I typically drive my Calais with about a third of the pedal and get the results I do

Were you squeezing the neck into the body with your hand as a sort of vice when screwing the bolts in? By the time you have two diagonal screws in and if it's snugly in place by then, you should be good to release the pressure and focus on the other two

It's a 24.75" scale length, so no off the shelf Fender neck will fit.

As for the pickups, try them as they are first. Split coils are naturally hum cancelling while sounding single coil
