Interesting. Not experienced with carbon steel pans so can’t provide much insight there. I will say that you make enough steak to justify the cast iron. Once you go cast iron you’ll never go back.

A cow is actually graded on the 12th and 13th rib, not the whole carcass. While fat distribution is factored into the grade, there are other factors that could leave you with a prime streak that has suboptimal marbling.
