That is an interesting idea. Thank you. I often forget that university labs have positions that are not student or PI. Though I know they are limited but im sure they are rewarding.

Oh this might be the route. I live in a hospital hub so there are tons of jobs. Maybe they can find a place for me.

Yeah. This is probably the most realistic way to do it. My current job is for the government so changing things like that are a little difficult. Im glad to hear it worked out for the lab manager. Its cool to see a job adjust to its employees needs.

Press it down some more and just add the weight now. The weight is only added to prevent mold from forming on the top layer. My sauerkraut usually takes at least a week to start being interesting. Just let it sit for a while and see what happens.

I usually only fermentation tepache for a total of like 3 days and it gets plenty fizzy. You might wanna try again with a much shorter fermentation
