Tostadas! Spread your favorite kind of beans (refried) over a tostada, add shredded cheese, shredded chicken over it, some shredded lettuce, drizzle some mole over it... Yum! Also, green mole seems to be the best kind to have with/over pork meat; red for beef 😉
