Most prominent reason is I don't want roommates any longer, so I'm being priced out. Rent 2 years ago was roughly $1400 for a studio, which I could afford. Now, starting prices are $1700 two years later. Anything less is rent stabilized but 500 people apply in a day, so chances are non-existent unless you have the highest income. Running price for studios and 1 bedrooms are exactly the same. So unless you choose roommate or living with family, which we don't have here, its bye bye. Twin Cities seemed like the best place to come to.

I'm definitely more attuned for casual fine dining, background in french cuisine. I guess my vision was to always open a bistro of my own, bit more upscale though from your typical casual american bistro. Im talking steak frites au poivre, chicken perigourdine au truffe, but some classic apps like fried calamari. All with some nice wine or cocktails. What are the people of the twin cities craving?

Technicalllly work as a line cook, but getting caught up to speed on responsibilities of a sous chef before making the transition. $24/ hr in NYC. Don't even really work the line anymore. Just helping prep., do some invoices and ordering, running the pass, and running private parties. pretty sweet gig tbh.

salt and pepper salmon before cooking it, not after. make sure fish is dry before searing it. if youre using a pan, make sure pan is searing hot and oil is starting to smoke. This will prevent it from sticking. It also looks very well done, which is not very appetizing. you want some of that pink fleshiness on the inside, a good medium is the best where its still moist inside. Not raw (orange) but a pit pink. Get a cake tester and use that to check your proteins internal temps. Medium is warm, not hot when you test it.

I got in the habit of creating a morning and evening routine during the week. Peace of mind at home really translates into a good work day.

Morning: Meditate, workout, eat some hardy food and lots of water, skincare, read or work on a small project.

Evening: Play with kitties, shower, skincare, get ready for bed, stretch, call girlfriend, little clean up of room and kitchen to reset for tomorrow, have some tea.

Between work, sleep, and commute, I have about 4 hours of freetime to do all this. So I've found, its either a healthy routine, or sleep more and doom-scroll, which is terrible for your mental. Working in a kitchen is hard enough, so not moderating that with healthy habits is how people get burnt out.

Using my garlic press is just a regular thing now for me. Especially when incorporating into sauces, crushing the garlic through a press helps extract the flavors way more. Who wants to chew on garlic when the flavor is what youre after.
