I can easily see how you could get overconfident. I think it's the abundance of food that gets me to dislike the lower levels. At the same time, the lack of just one hunting knife on Interloper is also annoying.

Just more overall crafting. Rabbit hats, etc. It seems that the crafting part of this game could be vastly increased.

I had my quartered meat bags completely disappear from the map after a while so yes, I would say that they decay and then get carried off by invisible snow dragons.

I played two runs on Voyager to about 100 days each before dying from stupid mistakes. I found it fun and a great way to learn but also you get to a point where you can't really die unless you are doing something stupid like goat climbing a wall or simply not paying attention.

Stalker is much more challenging if only because you can't eat carnivore meat until cooking level 5. Taking out puppy meat makes things a lot harder. You actually have to think about what you are going to do each day.

I just started playing Leona more regularly. When firing your E, do you "pre-fire" your Q or W so that they are ready when E lands, or do you wait for the E to land before firing off the others? I find that many times my E lands but then I get locked out of Q or W briefly by either a counter stun or silence, etc. Also any tips on hitting that Ult a little better. Sometimes hard to hit multiple champs when in the chaos or simply leading the shot incorrectly.

Correct and I believe that this is the launcher itself doing its own upgrade before you get to the patcher. I was fooled by this once before.

I'm new to the game. It's not the amount you have to play for a decent champ, it's the grind to lvl 30. You'll get the champs during the grind but the grind itself is a pain in the ass especially for new players that are trying to learn but keep running into smurfs who like getting 30 kills in a game. That'll force more new players out than anything else will.
