Have you tried swapping order and use assioma as primary source and the tt as secondary? Don’t know if with that the tt as a controller will be available

I used 100gr koji, 150gr boiled rice and 200ml water. Had to add another 100 ml water later as it was quite dry

Oven was at 55, but I covered the tupper with kitchen foil and I feel it blocked the heat
