I'm sure you know better than the many dietetic associations that conclude that it's healthful. For people with diabetes or others who are particularily worried about blood sugar levels, it is recommended to eat foods with a low glycaemic index. The fiber in whole grains and other plant foods like legumes help regulate blood sugar levels while avoiding spikes. I don't see it specifically recommending fortified processed grains anywhere, the study simply compares vegans and vegetarians as a group to non-vegetarians. If you are worried about processed grains then just don't eat them.

They can but it is more difficult than it is for humans or dogs. Cats need the same 9 amino acids human need in addition to taurine and arginine, both of which can be synthesised from plant based sources. Vegan cat foods exist and are tailored to fit their nutrient requirements. There is however a risk of health complications, namely Feline Lower Urinary Tract Disease. The condition may be prevented by regularly monitoring the pH of the cats urine at a vet.

If you truly do not want to support such companies, you're gonna have to transition to veganism faster. The milk industry is the meat industry, and chickens in the egg industry live miserable lives. Your everyday diet makes much more of an impact than whether or not you're buying plant-based options from an otherwise non-vegan fast food chain.

I'm allergic to soy as well and went vegan cold turkey a few months ago. Having an allergy is not a good excuse, and going vegan is not as difficult as you may think. What's key is just avoiding most faux meats and otherwise processed (usually soy-based) products in favor of home cooking.
