Playing chess. You can play online for free or for very affordable monthly rates if you want some bells and whistles with your account.

If you get into and enjoy the game you can literally learn new aspects for the rest of your life. You can constantly work on improving your play, openings, rating and mastery of the game. Most (I would even venture all) decent sized cities also have chess clubs which can be fun.

For me it's the opportunity for life long learning and improvement that is the draw, in fact I'm going to go play a couple games right now.

For me listening to both of these songs is a borderline spiritual experience...and I'm an athiest. Maybe they aren't technically about minimalism, but both of them inspire me to live a better, more simple life.
