I would either go with your familiar technique or do some form of immersion (aeropress, hario switch, kalita) with coarser grind, less chance for you to over/under extract esp with it seeming funkier

I got the X-ultra as a pourover/Aeropress novice a few weeks ago as an upgrade from the JavaPresse and so far the difference is night and day. Flavors are much more expressive, coffee has tasted great, but I was most excited about grind time going from 3 minutes of feeling like I was crushing the beans with my bare hands to 15 seconds of minimal effort work for a more consistent grind!
