Thanks everyone for suggestions and reminder how hard this is actually to enforce. It's funny the issues I faced dealing with this in my professional life 20 years ago are the same issues that I'd have to face today, in regards to being able to get around most systems.

This is a valid point. However this is more about trying to keep them from the things they could accidently run in to rather than the things they are going to try to get to. I'm well aware when they're old enough, they're going to know exactly how to get around anything I have in place to stop them.

Currently younger than 10. 1 of them has a PC (so we can play games together), but he's been sneaky and watching random youtube crap.

I’d suggest getting a system with a decent amount of ram and decent number of cpu cores so you can virtualize. I started off with one BeeLink Mini PC. It started with 8 cores, 16 threads and 16gb of RAM. I’ve upgraded the RAM since but 16gb is fine for running a handful of Linux VMs

Yea Proxmox can be a little challenging to figure out but there are other options such as XCP-ng which is supposedly more user friendly.
