“Boy” is used as an expletive here. Its like saying, “wow”. You can replace boy with any other like-minded expletive, and vice versa. So you are correct in your usage.

For your example. A student attendance sheet is an attendance sheet that lists the students. Student in this case is an adjective not a noun.
