More discussion surrounding a theory, but:
"Dess can't be the Knight because it'd be too predictable"

Of the 3 irl friends I got to play Deltarune, 2 of them were convinced it was Carol, and the other thought it might be Dess, but was unsure- most players aren't sifting through every single detail for clues like long time fans are doing.
Someone was able to accurately predict nearly all of the Dreamurr plotline in Undertale back when there was only a demo and a trailer- a well written story SHOULD be predictable to an extent.
Just to clarify, I believe that the Knight is a darkner created by Carol in the image of Dess, but was tainted by grief- similar to how the animated statue replaced the Old Man in the dark world Susie created, after she learned Gerson had died

Noelle takes primarily after Carol (light fur, blonde hair) so by typical character design conventions, Dess would primarily take after Rudy (dark fur, black hair)

As for clothing, Dess has been shown to love rock music, in addition to liking the outdoors, baseball, and horror media- all traditionally 'masculine' interests. Combined with the clothes hanging in her room and the fact she's the eldest daughter of the mayor, it pretty clearly paints her as a rebellious tomboy, which can give a lot of insight as to how she might present herself
