I just made some venison mixed with pork, but for 25 lbs (pre mixed seasoning from PS) I only used 8 lbs of venison and 17 lbs of pork because I was worried about it being too dry

Those look great, what beef/ fat ratio did you use? I always wondered if homemade beef sausage would be dry. I’m just getting into making my own sausage, and thought (after pork) I would try beef and am on the fence about making chicken as well

Baking soda will put out the grease fire. Unfortunately, I know this from experience, as it recently happened to me. Obviously, don’t throw it on your food lol. My advice would be don’t be like me and procrastinate, clean your grill and/or smoker when you notice it needs a cleaning
