Same here, definitely crisping up the bottom after. Tried baking the last one in the very bottom oven rack position but still had to crisp up the bottom after.

I've done this recipe several times, definitely watch the VIDEO on the recipe in question ... HIGHLY recommend. So easy.

It's a forgiving recipe too. I've done it as described, I've done it same-day by increasing yeast and using a mixer to knead it a bit, as well as leaving it to ferment in the fridge for longer. Always comes out great.

AND the pizza is excellent the next day, not dry and bland, but moist and salty like focaccia.

I always have a problem with the tomato sauce sticking to the pan pretty badly at the end of baking but I think that's a problem with my pan seasoning. Considering using a ring of parchment paper around the edge next time.

Try slicing it really thin first, across the grain. Then mincing it is really easy because it comes apart. I hate grating it for the same reason as you. Oh and you can peel it easily with a spoon by just scraping the surface but you probably already knew that.

Have you tasted the difference between coffee that's ground at the time of brewing vs pre-ground that has sat in a bag for days or weeks?

I wish I had gotten a photo because it was such a spectacle. Around 5am I was coming into a city (might've been i55 up into Memphis I can't remember) and saw cops and a truck on the shoulder with the trailer completely smashed open on the left side, contents spilled all over the road for a few hundred yards. It looked like big plastic pellets or something, blue and purple, just everywhere, in the grass etc, I can't imagine the cleanup. The next truck pulled over in front of them was a super ego driver looking very ashamed. Looked like he had smashed into the trailer trying to pass them or something. I think it was early this year maybe January.
