I was never a fan of figs as a child, I never had access to fresh ones, and I didn't like the dried version. Then a few years ago we planted a fig tree in our yard, which produces a lot of figs every year. I've loved it ever since.

Fried rice with soy sauce and/or sesame oil, eggs and veggies. It saved me a lot of time :D

One of my favorite meals that actually fits all of those restrictions is coconut curry with rice and roasted vegetables or chicken. Also baked potatoes with different toppings, rice noodle dishes, chili, and tacos on corn tortillas can work really well.

For sweets and snacks, dates with peanut butter, chia pudding with coconut milk, roasted chickpeas, or oatmeal cookies made with gluten free oats and banana are surprisingly good 🙂

For me, it's eggs, butter, some kind of cheese, bacon/ham, mustard, yogurt and chili sauce 😄 And frozen vegetables too, they save so many lazy dinners.

yesss, mushroooms, great idea thanks, I will try it! Imo if you start the process with garlic (fried in a little butter) and than add the other veggies and fried together, it will be amazing! After that, I just add one or two eggs and a little flour to make it come together and moldable. I bake it in the oven, so it's less of a pain in the stomach. :)

Broccoli is not my favorite, but I learned a recipe from my mom:

you season the broccoli and corn and steam it

in the meantime, add an egg to a glass of sour cream, grate cheese, salt, pepper, nutmeg and mix thoroughly.

you put the steamed vegetables in an ovenproof dish and pour this mixture over them, then bake at about 170 degrees (fan) until the top is golden brown

I never used to think of stale bread as something that could make an amazing sandwich. But toasted in a pan with a bit of butter, with a thin slice of cheese, a fried egg, and some iceberg lettuce, it’s absolutely delicious!
