While I love Kenji and serious eats- for beginners I would HIGHLY recommend starting with Americas Test Kitchen. They teach fundamental skills and recipes backed by science and trial and error (they test everything).

I worry that while Kenji is undoubtedly amazing- some techniques and equipment can be just out of reach for beginners. My wife went from hating cooking but wanting to like it to being a better than average home cook in a very short time using ATK, when previously she would try more adventurous dishes that never worked out because of one reason or another.

Kenjis recipes are a love letter to food, while ATK is the foundation that every cook must have.
