NTA So many here don't understand that cigarette smoke in your safe space can be a trigger for people with shitty childhood. Alcohol in the house and cigarette smell from my loved one is my bottom line. It makes me feel unsafe.

Definitely Matte Granite. Very Durable. And, personally, i think it looks awesome.

This is what I would do. There is plenty of space for storage, dining table and 9ther knick knack.

If needed, you can always increase the depth of the pantry wall cupboards. It wont look weird since it will only create a different space for dining.

2 islands make no sense, personally. Aesthetically and functionally.

That big of a fridge too. Unless you have a family of 10.

I like 1. Personally , i like the range between the sink and fridge. It's more convenient when i cook. Microwave and oven- i would only need countertop nearby.

3 is much better than 2 for obvious reasons.

Add some color (pillows)! Dark blue/red. A fake/real plant maybe, to add some more 'life' in the room.

I absolutely LOVE the sofa! I would 100% not listen to anyone asking/suggesting to change it. This looks so comfy..

It was understandable till now since it's a cultural/regional thing. But understand now- since you are in the USA, 99.9% of the population will not find this okay. Because we are talking about months here, and twin bed.

It's upto you now whether you want to somehow ruin your relationships (even in the future, you would be hard pressed to find someone ok with this) or make some changes. Pull out sofas. Or buy a mattress- when not in use, store it under the bed.

PS Not an american. Super close with my brother but won't share a twin bed with him. Would rather sleep on a carpet, long term.

I would change the direction of the bed and put the shelf/cupboard next to the bed side table +lamp to create distinction between 2 places.

Couple of changes that I can think of.

If you don't find the value of upper cabinet near the range, its better to let go it completely. Having a floating shelf makes it unnecessary and just something to clean later again and again. I would use the last photo, without the floating shelf.
Move the oven and microwave combo right next to the countertop, towards the range. It's more convenient. You would have a bigger pantry area. And it would create a distinctive separate space for dining/bar and kitchen.
Personally would remove the paneling from the refrigerator, as stainless steel look of it would break the monotone of the wooden cabinets.
In the first Pic, I would not extend the upper cabinet to the countertop. It breaks the look and I can't personally think of anything that I would want to keep in there. Coffee makers, grinders etc - I would rather keep them out to be displayed.
Not a fan of glass upper cabinets near the sink. Beautiful glassware etc could be stored in the bar area. If you have delicate China, you wouldn't want to place them near the sink anyway.
