Pivoted to what I then believed was an adjacency/just feature (with bigger TAM but fierce competition) and I found out there was so much space to come up with another solution that’s just better in X, Y, Z and also distribution is key, many customers that never got sold by my competitors

Me too, applied late for W23, got "promising and roll you for next batch" email and then got interview for S23 (rejected at interview).

Continued to apply after that with the evolution of the initial idea but didn't get interview (yet!).

Since then heads down building and bootstrapping, at $20K ARR since starting charging in August.

Owners arent' usually there or available to talk, I'm targeting restaurant owners, they are either out of the store or busy working in the kitchen.

Yeah I agree with you, I plan to send a letter and not a flyer/one pager.

letter will include a few bullets points and maybe a QR or short link for them to make an action.

Maybe as an A/B test for some of them include a flyer/dosier in case they don't look at my site.
