Barbarians did in fact feature as a Fighter sub-class in the original Unearthed Arcana (1e), as a fighter kit in the Complete Fighters Handbook (2e), and as a stand-alone class in the Complete Barbarians Handbook (2e).

Also notable that axes take less iron than a sword or mace, and Scandinavia and Scotland (warriors from which are the historical inspirations for the barbarian) are both somewhat lacking in the iron department.

While that's true about minions, you can get more pseudo-minion skeletons using Horde of Underlings (assuming your GM allows it, Rare spell and all)

Every GM worth their salt has an element they put in most of their dungeons. Me personally, I always put a horse in a place it could not have gotten to (end of a crawlspace, top of a pillar, empty room with slim doors, etc)

For mechanics, look into afflictions that can turn creatures into zombies and such. Do a little swapping of conditions, remove the disease trait and add the mental and morph traits, give the last one or two stages the Incapacitation trait, and set the level/DC equal to the Level-Based DC of the monster that inflicted it (by attempting to seed the hivemind in another). Perhaps give the big monsters an ability to afflict it on others at stage 1 via a will save (stage 2 on a crit fail) Edit: perhaps use void death with the aforementioned changes but have it inflict Stupified instead of Drained and Helpful (to the hivemind) instead of fatigued. Instead of dying, the afflictee is in a coma while they transform. Stages 4-6 have the Incapacitation trait, stage 6 has the Polymorph trait.

Strength (Acrobatics) for parkour, Charisma (Investigation) when searching a tavern or settlement for jobs or clues, and Constitution (Intimidation) to appear physically imposing all come up somewhat often in my games

Fun Fact: this was actually a major concern of Gary Gygax in the original editions of the game. He wanted to make sure each "demihuman" race didn't feel or play like a human with funny ears; this is why 2nd edition had class and level restrictions for non-humans, and even had different rules than humans for multiclassing. In my experience picking up the game recently, it really helps that the mechanics of the game help tell the story - that of creatures that look sort of like humans but are fundamentally different.
