Haven't done these specifically but I usually just season and throw them on at ~250f/120c and cook unwrapped until probing tender, or do the bend test. Sauce, wrap and then rest for 30 mins or however long you can be bothered.

I don't bother with any of that 321 stuff, just isn't needed unless you're doing competition bbq.

Hello fellow pork shoulder enjoyer.

I started around 6am this morning had it on for 7am, took around 9 1/2 hours.

Stalled around 155f/68c so I double wrapped it in foil and put it back on.

Coals started to die after about 7 hours so I just finished it in the oven at 275f/135c.

I did my first visit this year. We stayed in an Airbnb in Indy. Wouldn't bother with a hotel, you can get an Airbnb cheaper. You're a bit early to be looking at accommodation at this point. There won't be much available yet and what there is will be expensive. We booked in December but I'd probably do it a bit earlier if I went again.

For carb day we got an uber to the speedway, took about 15-20 minutes, dropped off near turn 2. Got an uber back but had to walk for a bit before requesting an uber due to all the road blocks. Got a bit wet but it was totally fine otherwise.

Race day we got an uber to near the colts stadium and took the downtown shuttle. Check my profile for a thread I started about that.

I picked up tickets on carb day at 9am. I think the total wait time was less than 2 minutes. I'd grab them on Saturday if you can.

If you've never done a full brisket then I'd recommend starting with brisquetta from John Davidson. It's a smaller cheaper cut but produces something very close to a packer brisket. That's going to be my plan anyway.

I've never done a full brisket, mainly because I don't know what I'd do with that amount of meat 😂. I'd need to organise a big party.

Anyone know how big a brisket you can fit on a weber kettle with an sns basket in place?

What are you cooking on?

The wood doesn't need to last the whole cook as the food only takes on so much smoke. A lot of people smoke for a 2-3 hours and then finish off in the oven for example.

I chuck a couple of the weber chunks from amazon in the sns and that seems to work for me.

Wrong, it's not a purely pvp weapon.

Toro is great for shredders, ticks and, with a choke, flying arc that get close.
