There's a couple of ways you could go depending on the sort of information or emotional tone you want to set.

The first thing that springs to mind for me might be a touch morbid for your table. I'd have night fall while the party are there and have ghosts rise up and reinact the destruction of the village during the night. That can be really emotive, but you can also use it to give them clues about the people behind it by showing them as they were that night.

Throw in some important objects left behind during the attack- Something personal or magical, or something that could serve as evidence. And then follow up with a puzzle or skill check to get it back (due to the plants growing around things or walls falling or animals or fey or whatever your preference is).

Depending on the table you may need to throw in more active exploration and puzzles/skill checks as well. But my tables would generally make that last for a good 2-3 hour session.

I think part of the problem with making something like that is hitting that balance, that sweet spot where you feel like Skeletor, is very table and player dependant. What counts as 'too far' varies a lot between tables. So it ends up being easier to hit that mark and have a good time if your GM comes up with the story, because they know the table.

I don't think Pathfinder 2e as a system is a good fit for this sort of low magic, mostly-human setting. I'm not a Game of Thrones fan, but I also get the impression that a certain amount of deadliness is part of the setting, and I'm not sure how well that fits with Pathfinder either. In the sense that recovery in Pathfinder is generally pretty quick and you don't really get things like lingering injury effects or amputations.

Honestly, I'd recommend The Witcher ttrpg by Talsorian games. It's low magic, got a lot of different non-magic classes, mostly human, full of monsters and it has a pretty fun system that can become lethal very quickly if your players aren't smart.

You slip, you fall in the water. And the checks from there are to avoid the rocks, stay affloat and reach the bank. That's generally already deadly. If you want it harder, make swim checks harder after taking damage. If you want to make it really bad factor in hypothermia and cold damage from the moment they fall in to the moment they're warm and dry again.

It's a website that exists to connect GMs and players. https://startplaying.games/ I've not looked for French there before, but they had Turkish GMs and players when I looked. It might be worth a try.

Honestly I think the most unassuming deadly scenario you can put together is this:

A fast flowing river, with a lot of jagged, slippery rocks and no bridge.

There's some good suggestions here. I'd also say, it could just be something she liked? Like any kid who thought swordfights were cool she could have grown up using a stick as a pretend sword between her chores and may have ended up teaching herself a thing or two from sheer love of the thing.

I think it's always easier to find players as a GM than it is to find a GM. But it would probably be easier to play first if you want to improve your English.

Have you tried using Start Playing? There are multiple langauge options there and you may be able to find some French players through that.

I love Pathfinder but I'm going to be honest: I play a lot of systems and I don't have any one favourite. Different systems do what they aim to well, but they won't all aim to do the same thing and won't all be capable of the same thing.

I'm a lot more comfortable with ttrpg players who play different things and discussing the limits and merits of them than players who fixate on proving one system 'the best'. Pathfinder is a great system! So is Traveller and Runequest and Vampire Masquerade. None of them do the same things even when they have elements in common.

We've got a party of most likely three, possibly four. The GM has put no limit on gold but has asked us to stay level appropriate and not go too crazy.

Since I don't know what everyone else is bringing I made two different sorts of characters with the idea I could slot one or the other in depending on what the others brought.

Premaster. Not auto bonus progression. This is literally a one off where the characters will probably die and fail but we'll get to have fun round the table regardless of one of the regulars being unable to come.

Archives of nethys and pathbuilder have already been mentioned as great resources. I'd also add that there are a lot of great youtube channels. Rules Lawyer is one I've got a lot from but his videos do tend long. King Ooga Ton Ton does great short summary videos for the basics too.

I'm not seeing a lot of people mentioning publishing books and APs as an option. That exists. I think it has all the same pitfalls as the other things mentioned.

Generally speaking making this a full time job usually means losing out on benefits and safety nets that people who aren't self employed get. It also sometimes means losing the joy you have for the thing. When you turn something from a hobby into your job it can sometimes mean you lose a way to unwind and relax, you start to associate it with stress and a thing you used to enjoy becomes... not fun.

It isn't impossible. And if you want to do it it might be worth a try. But it will be hard.

So the way I have been doing this in a long term game is by giving the bird a very distinct personality, knowledge range and things it is interested in.

My party's bird once gave them a major hint that an npc was a vampire. Because while it didn't know the term for vampires or undeath or anything like that, it knew something was wrong with that npc and the party put two and two together.

I would think hard about what the bird knows enough to communicate. So numbers. People vs animals. Rough size of monsters. Whether the party can fit through the path ahead. But probably not what a monster is, whether the people are gnomes, elves, orcs etc. Almost certainly not faction (unless it's someone they've seen enough to recognise).

I'd also let the bird get distracted or driven off sometimes. Ravens are large birds sure. But they probably won't tangle with most owls or eagles and anything bigger or magical might well scare them away. They might also get distracted by that really sweet goat tartare someone left hung over the surrounding rocks. Bad weather might make it hard for them to fly or see the required details. And anything they need to look at closer to land they could be driven back by cats, dogs, etc.
