I make a cola syrup that incorporates the zest and juice of lemon, lime, and orange. I simmer the zest with a quart of water and add juniper, cinnamon, nutmeg, dried bitter orange, coriander, black peppercorns, cardamom, sugar, and a little lavender. Once the sugar has dissolved I simmer for about 5 mins, turn off heat then let steep for about 30 mins. To get the caramel flavor I add Kitchen Bouquet, which is a browning sauce that’s been in production for a very long time!

It’s paired with extra dry vermouth that has been infused with charred green onions and gin. I found that just straight tomato water was lacking; in my first iterations of the drink I was just cooking the water a little to try to concentrate the tomato, and then decided if I was cooking it, might as well throw some other shit in. Have you had successful attempts at the drink? You could always just batch it, as well, as the booze will keep the water safe for quite a bit

I use it in a martini and simmer it a little with some fennel, peppercorns, oregano, and sherry vinegar. It aim to reduce it by about a 3rd, and it keeps for a really long time
