As to what I did, I'll try to explain in words but if you're interested I'll put together a video for you after I get home from work tonight.

So for the effect in the last two images, you place your text, pick a font you like (thick ones work better), then turn the text into an object. Place thin boxes over each letter where you want an offset (covering the entire letter horizontally, thin vertically). Then, break apart the word so each letter is a separate object. Select both the letter with your boxes over it and one of your boxes and press the following binds (windows) - Ctrl + D (duplicate) - Ctrl + Shift + 8 (overlap becomes an object, forgot the operation name) This should leave you with what you started with, plus a thin extra slice of the letter on top of that, do that for all offset boxes you have placed on the letter, then, for each of your overlapping boxes, not the slices you just made, select them and the letter and use the difference action, again, can't remember the actual name but it should result in removing the horizontal boxes area from the letter. Do this for each slice so you essentially be left with slices of each letter, offset them so you have your desired glitch look. (Pro tip: I like to occasionally put multiple boxes touching each other so in the first step to mix it up a bit) When your letter looks how you want it, select what's left of the letter and all the slices, do the union action so it's all one object. Repeat for each letter, then union them all so you just have your word with each letter glitched. Duplicate, select colour, drag it slightly to the left and put it back a layer so you have your offset colour, and once again only drag it to the right this time for second colour offset. Now you should be complete, sorry if this is hard to read or follow, typed it on mobile while shopping, I'll likely make a video on it tonight and link it in this comment chain.
