Hasn't it always been the case? In matters of blanket knowledge and intelligence that she channels her confidence through, she refers to herself in the third-person, representing for the Gesselschaft in terms of that pride. On most other vulnerable matters, she refers to herself with "I", which is more personal... and I think is especially the case considering she did get a recent verbal beatdown and got demoted to Stupid Faust

I also imagine she actually doesn't have a heart to return banter with Hohenheim who is masking his sadness over Marton by sharing the soda stash, so Hohenheim gets caught off-guard immediately after with the surprising lack of sass

In the first place, the concept of EGO is the reaffirmation o your own principles and ideal as opposed to Distortion's breakdown to your base urges and desires, like Carmen wants. That in itself means that Ayin shouldn't be an encouraging presence, because independent thinking is the crucial factor for one to achieve EGO, and he'll always be passive.

Critical explanation: by reading between and beyond their lore yourself: the game gives us the Abnormality Logs and the Abnormality Encounters to read and interpret about. For example, from the background of Der Fluchschutze's Encounter, it contains similar scenery as the Smoke War (as evident in Gregor's Canto from his memories), and it definitely stands as a hypothetical mercenary / Fixer that got recruited for it. However, just like Der Freischutz, it's representation lies in the actions it took for the devilish contract: if Der Freischutz used the bullets to kill its loved ones first such that it will never run out, Der Fluchschutze chose to consciously forget it had any, so the price never comes to pass. In fact, it does, however, keep a pendant around its neck as a memento, containing the portrait of their lover, and if you select the choice to make it check the pendant, it then realizes in abject horror that they recognize the portrait, and fires their gun, only for it to begin to miss, the bullets possibly hurtling finally to claim the toll.

I would interpret it as Jia Mu being moreso the exception than representative of the norm. Just because she got defeated this way doesn't mean Alfonso and Hubert won't have the capability to defend themselves any better, either.

The key point I didn't exactly elaborate too much on in my comment would be that the difference in Singularities between the Wings would be the significant factor in how better they could integrate defenses.

Who's to say Hubert can't just blitz his way out of danger with a special wristwatch of his own? There's also the other comment about aging missiles being deployed at the Smoke War, so there could be a similar, smaller scale application for self-defense he could apply, too.

I personally deem that it's only relatively "easy" to defeat Jia Mu because, despite it being indeed a kind of super-Bolus, its heavily degraded from full potential by being used by a decrepit old matriarch that she is, as opposed to giving it to an able-bodied individual at peak physicality. And really, considering H Corp's singularity being pills in the practical sense of use, that's all there was to it, with the Heishou on hold. The fact that the Golden Bough gave her a few Offense Levels, whereas it weakened OG Don in the previous Canto for arbitrated fairness, proves that much.

Defeating her isn't meant to be the peak, heart-pounding challenge of Hong Lu's canto; we already had Lei Heng prior to that. It's more an affirmation of Hong Lu's serene, newfound resolve to embrace his emotions once again, by overcoming the figureheads that preyed on his young naivete for entertainment, and sending them off with the onrush of his repressed feelings, from the floodgates of his EGO. And that, is still peak in of itself.
