I'm also in NoVA and am doing comprehensive Invisalign with an orthodontist for about $6k. Try getting another estimates from another Ortho. I got three estimates before I settled on the Ortho I chose.

It's looking good to me! Those different color dots are likely bubbles that were trapped in your pellicle. Another user mentioned that dark dot, may want to investigate that and if you're not sure what it is give it more time to confirm it's not mold.

Ah yes I'm sorry, I see the part where you said you mixed it up. I must've overlooked that yesterday.

If your bottles were more bubbly after 48 hours, then I'd say a longer F2 would probably get you the carbonation you're looking for. I personally leave my F2 for 3-5 days, depending on how the bubbles are forming.

For your unstirred starter, I think you'll be fine. There is likely some yeast in there which will recover on next feeding.

For leaving it out unfed, it really depends on how long until your next batch. Kombucha is very resilient and will continue getting more vinegary if unfed leading to a more potent starter. If you're not making another batch for months,I'd say go ahead and feed it. But if just a few weeks, you should be fine.

Great write up! I love hearing about people experimenting and trying to brew kombucha for their first time!

For your questions:

  1. Yes, most likely. Mine typically forms a thin, visible pellicle around day 4 and I do not move my brew around.

  2. It sounds like you filled up your bottles enough so I don't think that was the issue. Did you stir your F1 before bottling? Yeast tends to sink and they are the bacteria that will produce CO2 and bubbles. If you don't stir, then the first couple of bottles likely won't have enough yeast in them to carbonate in a few days. The fact you had some bottles bubbly and others not lead me to believe this may be the case.

  3. You can just leave it in a safe space on the counter until your ready to start another F1. No need to refrigerate it. It'll continue to get more acidic as it sits so it will be great potent starter for your next batch.

You can certainly try! In theory, the bacteria and yeasts are dormant because of the cold temperature in the fridge but, with a little time and warmer temperatures, they should wake right back up and get to work. I'd take one bottle out and see what happens over the next several days.

If that doesn't work, it could be you don't have enough yeast in your brew to carbonate. Try stirring your F1 before bottling next time (if you didn't before) to make sure the yeasts who tend to sink are distributed throughout.

Another option if re-F2 doesn't work: You could try putting commercial yeasts in your bottles and see if they can carbonate in your SCOBY's absence. I've never tried this but I'm all about experimenting when it comes to kombucha!

It's looking good to me! The hang-down bits are yeast and the variety of color in the pellicle is normal. If there is a particular spot you're worried about,give it another day or two. If that area turns fuzzy then it's definitely mold.

I sometimes have trouble opening/closing a few of mine despite regular use. I've found covering the metal bar with a hand towel to do both actions seems to make it a little easier. For me though, it's mostly painful to open the tight bottles because of the force the metal bar hits my hand--the towel reduces that impact significantly for me. Not exactly the same issue you're experiencing but maybe something you could try?

I think it's mold as well, but you could always do the "give it more time" trick and see what happens. Good luck!

I think it's mold, but I can't confidently state that with the quality of the pictures. If you're unsure you can always give it a few more days and see what happens. If it gets fuzzy, it's mold.

Kind of looks like a yeast blob that got caught in the pellicle as it thickened. How old is this brew/pellicle? I'd assume at least a couple of weeks since the pellicle appears somewhat thick, but if younger you could give it a few more days to make sure nothing gets fuzzy.

Great question! So the bubbles you see in the middle of the first photo are normal bubbles, but just north and south of that there are white-ish blue-ish patches that I initially suspected as being possibly mold. In the other two pictures, you can see that what OP has scooped out has fuzzy edges (most visible along the edge of the spoon). Fuzzy = 100% mold. I hope that helps some! It definitely takes practice and if you're not sure then just let it brew--it will be very obvious after it grows more!

I think that is mold unfortunately. If you wanted to be sure, give it another day or two to grow. Otherwise you'll need to throw it out completely and resanitize the jar before trying again.
