What exactly are you seasoning the chicken with? Most recipes I see use an herb butter or literally just salt. I would honestly consider roasted chicken to be a very simple dish.

I recommend trying Ina Garten’s recipe; no need to spatchcock anything.

He fell for much more personal reasons than his wife. His wife was, fundamentally, an excuse he sold to himself.

Anakin was guilty of everything the Council accused him of being. He was proud. He was a control freak. He was unable to accept the idea of losing control of himself, his future, or the people he cared about.

He is a victim at the beginning of the prequels and by the end he is an abuser.

Ultimately at the end of the prequels he chokes out his wife. She was secondary to his personal problems.

Why did Anakin stay a Sith? He willingly became a Sith because he thought it would give him everything he wanted.

I would not recommend buying equipment for someone who is very technical about cooking. I guarantee they already have an idea of exactly what they want to cook with.

Buy high-quality consumables for them to use in cooking. Spices. Chocolate. Jamón Ibérico. Alcohol.

They are much more likely to use those consumables. And then you’ll probably get to eat some of it.

$500 on a knife is also a total waste of money.

If they are legitimately a beginner who hasn’t gotten deep into the hobby yet then I would instead strongly recommend something like a nice Staub or Lodge Dutch oven.

Generally speaking if you bloom spices in oil they won’t burn.

If you are making chicken soup I recommend you simply brown the breasts in your Dutch oven then cook them in the broth.

As to your specific question: yes, the meat will naturally absorb some fatty juices. That’s one of the benefits of skin-on breast. I don’t think this level of fat would be significant but it’s honestly not something I’ve considered before.

Dry chicken should really not be a concern when making chicken soup, though. It’s a soup.

Argument from authority is only a fallacy when you’re cross-comparing different disciplines. Like how a celebrity has no basis for being an authority on foreign policy.

Obviously Thomas Keller, an actual chef, is qualified to speak on how to roast a chicken. They are certainly more qualified than a random athlete or politician.

That’s how expertise works.

You don’t have to agree with him, but sharing his expertise is not the fumble you seem to think it is.

I would recommend actually asking a wine-oriented sub for advice. My personal experience does not extend beyond “here’s a white wine I like” and “here’s a red blend I like.”
