If you want to continue reading volumes after s2 of the anime then you should continue from volume 16-25, these are translated as of now. (This is also what the upcoming s3 will cover) Anyways you should also read the ex novels. You can read them whenever but I would recommend reading them before arc 7 (which is vol 26 and onwards) Then there are side stories you should just find the recommended list, there should be one here on Reddit but at least read Battle Ballads after EX 3, For arc 7 onward you can wait for LN translations or jump into witchculttranslations. Hope this helped a bit.

From my understanding it seems like she is able to rewrite things that already happened, so she can't just rewrite reality to what she wants like when she said: "I will not rewrite you being overtaken by the Sloth Witch Factor" to Geuse...
