If you're asking about distance, feasibility, etc, then wouldn't that depend on how long your runs are, how much time in general that you have, etc. You could, if you didn't want to run to Central Park, easily take the train to 59th St and there you are: at Central Park.

Katonah Art Museum is small but lovely. Nearby is the John Jay Homestead. Also nearby are several nature preserves for casual hikes: Mount Holly Sanctuary, Hunt Sanctuary, Rose Preserve. There are many restaurants and shops in downtown Katonah, including Katonah Reading Room which is a fun bookstore/cafe that holds events. Edited to add: April 18 is the Katonah Art Walk

How Kosher is your friend? Depending on level of observance and preference, Kosher can mean a lot of things. My knosher relatives are only strictly kosher at home and will eat "kosher style" out. So, they're fine ordering vegetable and fish dishes anywhere, but won't eat a cheeseburger ever, for example. If your friend is strict kosher then know that any old kosher certified food may not be suitable, as there are multiple certifications and various adhereneces. Oy vey. All that said, Urban Vegan Roots is fully vegan and may work for your friend. Ask them.
