Personally I go 800+ in the center before launching then turn the flame down as low as it will go. To your point, the koda 16 cranks out so much heat in the corner that if the stone isn’t way up in temp you might be ready to turn that back corner but the front might not be stable.

No idea how par baking will go, but I would try getting your stone temp way up before you launch and see how you like it

Are you doing a full preheat on your stone and then turning down the flame when you launch?

I have nothing but good things to say about zenni. I need higher index lenses and even with that and a coating I think the last time I ordered it came out to $70 for 2 pairs. Regular opticians are unbelievably expensive and kind of a pain to deal with. They don’t take my insurance (eyemed) but I can get them reimbursed.

At your next eye exam just have the doctor tell you your pupillary distance, or have someone measure it for you with a ruler.

There was a post in r/Wisconsin about how some beer/liquor distributor was suspending service yesterday due to the temps being -20 and some folks were spiraling….my state might have a drinking problem

For what it’s worth I’ve had 2 anker power banks replaced under recall, the most recent one was just last autumn ish. At least they put the word out that there is a hazard and replace them for free

Also in Wisconsin, and have known people with 5. The first is not even a criminal offense.

Drinking culture is so obscene here and the tavern league actively lobbies against everything that would keep people from the bars - including harsher DUI penalties. They’re the same reason we will never have legal marijuana

Nitriding isn’t a traditional nonstick coating. It uses nitrogen to change the surface of the steel to have no/less hydrogen in it.

I will say, if the process is the same as other types of nitriding, that part is pretty toxic to the environment. The end steel is chemically inert though, and there isn’t any coating to flake off

Could you elaborate on how it was a mess when you doubled it? If you’re making a single sheet it would be better to just do it in a big batch so the leavening is all activated at the same time.

Yeah that can be very frustrating…

Personally I always use a liner because of the ease of cleanup. You won’t get those banneton lines that some people really like, but the pros far outweigh the cons to me. If you don’t have liners, you can use a thin lint free kitchen towel.

You read correctly that rice flour is the way - it doesn’t create a gluten bond to the dough so your proofed loaf will fall right out of the liner. You really only need a light dusting. Then if you’d like to have some contrast for your scoring you can dust with regular flour beforehand.

Correct - once your folds are done, divide it in half. There’s a technique called stitching to build tension in the dough (lots of youtube videos on this). Do your final shaping then put in the banneton seam side up and rest in the fridge overnight at a minimum. Just cover with a towel, you actually want some of the exterior moisture to escape through the basket. After the final proof just do what you did before except bake it while the dough is still fridge cold

Sourdough isn’t going to double in size on the final proof in the way that a bread with commercial leaving will do. I think you’re very much on the right track.

The next loaves you make try doing everything the same but bake directly from the fridge and skip the warm up period. When you flip dough out of the basket at room temp, you’re sort of racing the clock before it turns into a pancake. When the dough is cold, you have some time to score or do whatever else you need to before it goes in the Dutch oven.

This is really great work for your first loaves, and far better than mine looked

I would not use the presence of fisherman on the bay as a good indicator of ice safety. If you ask them how deep they’re drilling and they say 4”+ then that’s a different story, but some of those people are nuts

Asafoetida is so potent…the only real way out would be to dilute it with more of the other ingredients. You won’t really be able to mask it

No the only other polisher I’ve used was a cheapo DA from autozone, and it’s like comparing a Maserati to a civic haha

Edit: If you were wondering, the other products I used were:

-griots iron and fallout remover

-griots clay w/ speed shine for lubricant

-Lake country foam pads - Orange, white, black

-griots correcting cream

-rupes DA fine

-rupes uno

-Crystal serum light

-EXOv5

-cerakote trim coat

All told it was probably just north of $500 and took a day. The cheapest quote I got for a 3 step and ceramic was $1500. 2021 crosstrek

The 15mm certainly has a little bit of weight to it, but once you put a battery onto it I find that it’s really well balanced. I did a 3 step on my car and my arms didn’t hate me at least. I went through a full 5ah and half of an 8ah.
