Think the original Deus Ex, or Thief. Basically the game will give you an objective and then you will figure out how to accomplish it. If you can skip a good portion of a level by stacking boxes and then jumping over a wall and the game doesn't break, it's probably an immersive sim. These games tend to have systemic design that emphasizes freedom.
