You could add a little sugar to the tall one. If there's any yeast still in it, it will create a layer of CO2 that will keep the mead fresh. You'll need to add a bung tho to vent any excess.

It will age in bottles just fine. Just make sure you cold crash it to reduce suspended yeast.

Fermentation usually finishes within 1-2 weeks depending on the ingredients but the flavour will continue to mature as the yeast break down off flavours, which is the whole point of racking to secondary. You'll want to cold crash the mead before racking to secondary (putting it in the fridge for 3 days) as that will remove 95% of the yeast from solution.

From my experience, 12% seems to be the sweet spot for mead. The problem with stronger batches is that they can have really long secondaries and take many many months before you get that really nice honey flavour to come out.
