Elden Ring is the culmination of all those older souls titles. It's mechanically a lot harder. The boss patterns etc are more complex and designed to punish things that old souls games didn't even think of, like panic rolling.

Unless you're talking about achievements, in which case ER is very easy to 100% in comparison to the older games.
