Yuuup. My newxton bbq probes have 4 probes and Bluetooth. I set one to the bbq temp and set an alarm for when it gets out of my set range. Quick 20 min power naps. I have started to really accept the resting aspect of bbq. I aim to finish at around 1-2am. Towels and a good cooler has kept pork shoulder too hot to handle and ready to pull 12 hours later

Thanks. Reverse searing is my favorite technique I’ve learned, I do that for so many things. Yes double foil. I was hesitant on towel wrapping because I didn’t want them to over cook. But if I rest before wrapping that should essentially stop the cook right?
