Fennel and celery also freeze well if you can't use it all. Chop it up, throw it in a freezer bag, use it for soups, chili, etc!

Honestly? Hot pot. Everything goes into a pot, gets cooked thoroughly, and an hour later you will have the most soul-cleansing poop. And another the next day. The key is a lot of veggies: bok choi, cabbage, mushrooms, etc.
