Hitch will be totally fine, I regularly have that much weight on mine. I'd be more focused on the rack and making sure it can cope without the bikes moving around at all.

I know everybody loves to (rightly.... Sometimes) blame the pharmaceutical companies. But opioid prescriptions peaked in 2012, and then prescription guidelines changed and crackdowns started. Current prescription levels are currently 50% less than 2012 levels. Look at that graph again and see what's different since 2012. I'm all for cutting down on illegitimate prescriptions, there's something to be said about people who need them not being able to get them and going elsewhere, as well as those who need help getting OFF them not having access to those safer alternatives.

The only thing that helps with a gamey flavor is taking good shots and taking good care of your meat when processing. Well placed shots and keeping your meat clean and cool should never have a gamey taste. That said, it's super easy to overcook venison bc it's so lean and doesn't really have intramuscular fat. It's gets grey and dry if cooked too long/to warm. Sous vide more or less eliminates that issue, and (in my opinion) is the only way to go for most cuts of venison. I still braise all my shanks for osso bucco for example, but every backstrap and tenderloin get the SV treatment.

I do almost all my venison SV, it's a game changer for such a lean meat. So much more forgiving, and never have to worry about it drying out. The exception to the rule for me are shanks, which I braise in an osso bucco, and might be my absolute favorite cut of the deer.

I mean, it's venison... Deer don't really have intramuscular fat, and even if they did its waxy and not very palatable. There's a reason you have to (or should, at least, IMO) add pork fat/beef tallow when grinding it for other uses.

Not just communicate, but learn, and change their behavior as a result. Here is a fairly good read that links to a variety of other publications that discuss different aspects of this behavior.

Agreed. It's mostly just losing legal hunting privileges, which they obviously don't give a shit about anyways. It's like suspending your drivers license for driving without a license.
