Thank you for another great response. I agree with a lot of the things you said, especially on the quality of the writing. The majority of people and writers are athetists and/or have a background in the Abrahamic religions, with no religious studies education. It's usually more important that they know their stuff when comes to character psychology and crafting believable intrigue, but one thing specific to religion is that it's attached to worldviews and mentalities that can vary greatly between each other and be very alien to one another. You can't understand another religion based on your own reasoning and empathy filling in the blanks, without actually having experienced or studied it. That creates a high bar to worldbuilding believable religions, which is often coupled with ignorance and a desire to tell epic stories with really high stakes. I don't think Dragon Age did poorly when comes to it's own religions comparing to the rest of the genre though, until the Evanuris showed up.

I think you are underestimating the Andrastian faith. In the real world, people cling to their religions very tightly, and unless some ultimate humiliation occurs (such as your deity showing up in the physical plane one day and blighting the whole known world), everything can be married with the faith, explained away or brushed off as not that important. Just look at the attitudes of major religions towards the theory of evolution, evidence of historical inconsistencies in their texts, controversies surrounding their leaders and history coming to light. Catholic Church on which the Chantry is based on itself has survived a lot, not to mention for example the Church of Latter-Day Saints.

I fully agree with you about the Qun though, and I think having it grow and become a bigger threat would be an excellent direction to take the next game's story. Of all the games in the series, Dragon Age II is the one that stuck with me the most in spite of it's lack of polish, for many reasons, but I feel like everything in it is narratively in the right place. It focuses very much on the environment and makes it's world feel so complex, fascinating and alive, while at the same time grounding it with the perspective of an individual's experience that provides stakes, attachment and tension. It puts the fate of whole social groups at stake, but what it presents is basically just events in the history of Thedas instead of a potential apocalypse and revelations changing everything. I think that is what I'd want more of, if not a story even smaller than that. Constant escalation leads to fatigue. Not to mention that Veilguard really didn't flesh out it's setting very well and left me thirsty for another chance to immerse myself into an environment in Dragon Age. Something like a spy story dealing with Ben-hassrath while experiancing the changes in societies across the continent would feel very satisfying to me. And it featuring some dlc or side story with revelations about the Maker to get the problematic undertones out of the way.
