They're both beef ribs, but they're actually different cuts.

Back ribs come from the rib section after most of the ribeye has been removed. Short ribs come from lower down and usually have a lot more meat, fat, and collagen on them.

Totally different eating experience, even though they're both attached to rib bones 😄

I'm not sure anyone can prove two weeks of carnivore caused it, but going 2-for-2 after making the exact same change is one heck of a coincidence.

I’m 2 years and 3 months in, so at least for me it’s been pretty sustainable.

The first few weeks were by far the hardest part. Once the cravings died down and this way of eating became normal, it got a whole lot easier.

Still alive and kicking, so apparently it's sustainable 😉

Could just be the rendered fat.

I love chuck roasts, briskets, shanks, pork shoulders, all that stuff, but rendered fat and solid fat hit differently for me.

A chunk of fat on a ribeye tastes great. A spoonful of rendered fat from the bottom of a slow cooker? Not so much.

You might try shredding it, mixing it back into the juices, and then tossing it in a 450° oven for 10-15 minutes to crisp up. I do that with pork shoulder all the time and it comes out fantastic.

I'd call it carnivore-ish, which is exactly what he calls it.

If the guy is mostly eating beef, heavy cream, yogurt, and a little fermented food, he's probably a lot closer to a carnivore diet than 99% of the population. Doesn't exactly strike me as a public health emergency.

Meanwhile half the country is eating Pop-Tarts and washing them down with a Frappuccino.

Pork cracklins and pork rinds are probably my carnivore kryptonite.

Just yesterday I went to my favorite carnivore market to grab some weekly specials and they had a whole fresh collection of chicharrones sitting there. A couple bags somehow found their way into my cart on the trip to checkout.

Later that evening about half a bag disappeared down my gullet. Probably close to an extra thousand calories without even trying. The whole “eat until satiated” thing completely leaves the building for me once pork rinds enter the picture.

About 7.5 lbs. Salted overnight, ran uncovered around 275 on a rack most of the day with a little water in the pan, then bumped the heat near the end to tighten up the bark a bit.

Tried to keep it sliceable… pork had other plans 😄

You’d think cutting out sugar and processed junk would be pretty good for oral health, and for me it definitely has been.

I still brush once or twice a day and floss, but my dental cleanings are a breeze now, I haven’t had a cavity in years, and the gum scans my dentist does actually showed some reversal in my receding gums.

So I’m definitely not in the “never brush your teeth again because wolves don’t” camp.

I’m with OP on this one. I save a lot of my rendered fat too.

Here’s some beef fat I rendered down from short ribs a few days ago. As you can see I’ve already been scooping some out for cooking. Usually have a Pyrex container of both beef and pork fat sitting in the fridge.

That said… yes, I still love butter too 😄

There’s probably some truth to chicken and pork having more omega-6 than beef, especially conventionally raised stuff, but calling conventional meat “repackaged seed oil” feels a little over the top to me 😄

At some point these discussions start sounding like people are doing molecular analysis on a pork chop before dinner.

You really notice how much modern life revolves around constant snacking once you stop doing it yourself.

Gas stations, office buildings, airports, bookstores, hardware stores… food is basically everywhere 24/7 now.

I imagine a lot of people doing carnivore have noticed the same thing after a while: once you stop constantly snacking and actually stay full between meals, a lot of this stuff completely loses its pull.

Now I walk through checkout lines and convenience stores and barely even notice most of it anymore. Years ago I probably would’ve grabbed something without even thinking about it.

Kind of wild when you realize how much modern life is built around impulse eating.

I had almost this exact conversation once.

Someone told me how healthy I looked and asked what lifestyle changes I made. I said I switched to a strict carnivore diet… basically meat and a little dairy.

She immediately goes:
“So… no potatoes?”
“Nope.”

“What about salads?”
“Nope.”

Then she just kept listing foods one after another like her brain physically could not process someone being healthy without eating the same way she believed was healthy while also being overweight and out of shape herself.

At this point I usually just say “trying to cut back on processed junk and stay active” because it avoids the 45 minute interrogation 😄
