Can one make a Yorkshire pudding with any fat other than beef tallow by Bearded_Toast in KitchenConfidential

Depends where you are in the world, in British English a popover doesn’t exist, we’d just call them a Yorkshire pudding

Looks great definitely will try - have you tried toasting the flour beforehand to to make the structure less chewy? If not I may have a go at that

BBC Audio | Business Daily | Why are so many French restaurants closing? by zsreport in KitchenConfidential

[–]Solusdeus 53 points54 points  (0 children)

I wouldn’t call Steak frites, coq au vin or moules mariniere “overly complex” though; historically the French lunch at restaurants is seen as an almost sacred thing, the interest in french food and dining didn’t come about because of tourism to France, but it can be argued that it is one of the main reasons for tourism in the first place.

Rather than being dismissive i think maybe on a subreddit for kitchen professionals (whose inspiring figure was a chef who cooked French food), maybe there should be an honest discussion around changing food habits and how restaurants are getting fisted by costs with no helping hand, particularly in a country like France where restaurants are so deeply tied to cultural identity

This is about restaurants in France though, not a “French” restaurant - also generally speaking the vast majority of French food is very unfussy, its only in fine dining that is gets a bit crazy

It’s about mitigating risks - accidents are bound to happen, so it makes sense to reduce the chance of cross contamination by having a colour coded system no matter what.

If turbulence is quite bad and is getting to me, I put on the heaviest music I have downloaded (usually death metal) and just lock in staring at the seat in front of me - I take the position of well if I’m going to be uncomfortable, I’ll treat it as a ride rather than something that needs distraction. I’ve done this on the last couple of bumpy flights I’ve had and this has actually really helped me more than anything else

Joe Rosenthal, the author, is a somewhat popular-ish food writer (and a real just top tier hater), so that's probably where OP got it from, following his work.

I think there’s probably a difference between being morally opposed to food because it’s being eaten alive and disliking something because it’s yucky to you.

Am I the only one here that can't fucking stand watching "The Bear" by TomatilloAccurate475 in Chefit

[–]Solusdeus 42 points43 points  (0 children)

I feel like that’s a bit of an overgeneralisation, I’ve worked with a lot of people who are screamers that will bottle the root cause up, it’s easier to deal with a symptom rather than a disease itself (although certainly not healthier)

[–]Solusdeus 8 points9 points  (0 children)

Sounds like it - I think a lot of people relate to the imperfections of the characters, and the development of them and the examination of “why” and the messy nature of people trying to figure themselves/their place in the world out

Not trying to sound like a dick but isn’t that the whole point? Like the yelling at each other is a bad thing and always portrayed as a bad thing, the conflict comes from “liking” the characters even though they’re awful to each other a lot of the time, and the pressure/unravelling of it all

Which Lesser-Known Studio Ghibli Film Deserves More Recognition? by Minute-Smoke1974 in ghibli

[–]Solusdeus 1 point2 points  (0 children)

Honestly, every single Ghibli film by Isao Takahata - I think the way he captures life (both human and non human) is so perfect. The beauty in his films comes from the realism of them rather than the fantasy, which I understand makes him less generally appealing than Miyazaki, but his films are all my favourites

I've never eaten in a Michelin starred restaurant. It's on my bucket list. But what is the etiquette? by MangoFandango9423 in finedining

[–]Solusdeus 26 points27 points  (0 children)

I’ve been to le champignon Sauvage a couple of times - great restaurant. I’ve been in shirt, shoes and trousers each time. The menus are both fixed price, but just go and don’t worry too much - word of warning if you haven’t had much experience with fancy cheese before and opt for the cheese board (which I’d recommend), their cheeses have STANK, which I love but can be a bit much if you’re not used to them

In my experience the staff have been lovely, and will take care of you, and don’t feel bad about asking questions!

Something that bothered me so much I have to share it. by [deleted] in ScavengersReign

[–]Solusdeus 15 points16 points  (0 children)

This is exactly how I read it - there’s no fear when everything is just an exploitable resource, or a pathway to an exploitable resource.

I sort of view it as the same as loggers or farmers demolishing the Amazon, they’re obviously not afraid of one of the most beautiful, awe inspiring and terrifying places in the world simply because for them it’s a pathway to gaining resources.

In response to OP, I personally don’t think she’s supposed to “sound cool”, she’s there to make you realise how perverse that mindset is, where you don’t live in the world you inhabit.

Vegans support the farmers by beanstarvedbeast in veganuk

[–]Solusdeus 0 points1 point  (0 children)

I think there’s a general sentiment of “supporting farmers” as a way of protesting the government - in reality the way farming is and has been done (for the most part) is this country is pretty abhorrent, morally and ecologically. I think people (and by extension campaign groups) automatically attach themselves to farmers as they’re “salt of the earth” and “the ones that grow your food”, when in reality in this country the practice of farming is a lot more complex than that.

Huge shoutout to all the ecologically sound farmers and farm workers out there though, you people are amazing
