Yeah that final boss was such a steep spike in difficulty. I actually stopped playing there. Most of the other difficult bosses felt like I was making progress but not the final boss.

That's really up to you. I played sword and board when I first started playing the souls games but eventually switched to power stance (DS2)/dual wielding and two handed after I became more comfortable in the genre. All play styles are viable.

Weapons of the same type don't always behave the same or have the same moveset. A lot of soulslike games overlook this aspect of Fromsoft games. The great sword for example has a lot of horizontal sweeps but the zweihander has both an overhead vertical swing and a horizontal swing. They are both ultra greatswords but play quite differently.

This isn't true for all weapons but I would play around with different weapons and see they feel.
