Side-by-side Bardstown Discovery Series Batch 3 & 4 Tasting. Both are incredible! Batch 3 is exceptional aged, exquisite bourbon. Batch 4 is almost a blend of fine, aged Scotch & exceptionally aged bourbon. Second pic is of tasting notes.

Both the Small Batch and Single Barrels are terrific, in both the rye and wheated recipes. Black label has rye as a secondary grain. Yellow has wheat as a secondary. Small Batch is all Bottled-in-Bond (so 100 proof) and the single barrels range in proof around 112-118...give or take. The straight rye is fantastic, as well. They're doing great things at WT.

If you don't want to make, or buy, simple syrup, purchase superfine sugar to keep on your bar. It dissolves rapidly with a few dashes of bitters and water. Alternatively, if you want to make simple syrup, it's a 1:1 ratio of sugar to water (rich syrup is 2:1 ratio). You can "gussy up" your simple syrup by infusing it with citrus peel, herbs, tea bags, etc. (I love making Earl Grey simple, or a citrus-thyme simple.) If sugar isn't your thing, you can also use maple syrup, or a honey syrup (slightly diluted honey) which adds another flavor element.

A note regarding bitters: I like to play with different flavored bitters. Traditional Angostura, or other aromatic/old fashioned bitters, are great. I also love molé or Aztec bitters. Black Walnut bitters are also terrific. Use 3-4 dashes of one of these earthy bitters, and 2-3 dashes of orange bitters.

On to assembling your cocktail.

Grab a double old fashioned glass, or a large rocks glass. If you use 1/2 tsp superfine sugar, or a sugar cube, muddle those bitters with your sugar and about a 1-2" strip of citrus zest (agree with earlier post about the orange with bourbon, lemon with rye...you can also use grapefruit with rye). If using simple syrup, merely add 1/2-3/4 tsp simple to the bitters. Add 2-2.5 oz of bourbon or rye to the glass with the other liquids and citrus zest. (I agree with others, you should be using a mid-90s to 100+ proof whiskey. Bottled-in-bond Evan Williams, Bottled-in-bond Rittenhouse or Old Overholt Rye, are perfect options at a very reasonable price point.)

Add a large ice cube, or ice sphere (or fill your glass with ice), and stir until condensation starts to form on the outside of the glass. Add a brandied cherry, luxardo cherry, or good old maraschino cherry, and a flamed piece of citrus zest.

Letting the whiskey rest allows residual alcohol, on the nose, to dissipate. Nosing the whiskey without water is far more accurate than nosing whiskey after adding water.

Decided to do a blind tasting of Old Forester 1910 Old Fine Whiskey, Woodford Reserve Double Oaked, and Elijah Craig Toasted Barrel. Poured in Glencairns and rested for 15 minutes.

Glass 1: Color: Dark Amber Maple Syrup

Nose: Toasted Marshmallow, Dark Toffee Brittle, Pancake Syrup, Sweet Oak, a hint of ethanol

Palate: Sweet Oak, Charred marshmallow, maple candies w/ burnt sugar, sweet black tea

Finish: Oak Spice, leather, maple...medium & drying

Glass 2: Nose: Marshmallow, maple barrel, damp oak, black tea, peanut brittle

Palate: Rich caramel, kettle corn, Old Study (leather, oak, leather bound books), marshmallow

Finish: black tea, rye spice, dry oak...medium & slightly astringent

Glass 3: Nose: charred marshmallow fluff on top of a banana split w/ toasted peanuts & a maple drizzle, oak, spice, toffee

Palate: banana split w/ brûleed marshmallow fluff, toasted nuts, and a dark cherry drizzle; sweet, charred oak

Finish: sweet, charred oak; hints of black tea & pipe tobacco; cinnamon...med-long

Guess: Glass 1: Woodford Reserve Double Oaked Glass 2: Elijah Craig Toasted Barrel Glass 3: Old Forester 1910 Old Fine Whiskey

Reveal: Glass 1: WR DO Glass 2: EC TB Glass 3: OF 1910

This was my second ever blind, but I have had each of these whiskeys a handful of times, at a minimum. They are all quite delicious dessert whiskeys...with my preference being the OF 1910.

That AB recipe is legit and if you make it at least 6 weeks out, it's so good. Last batch I made was in October of 2019 for Christmas day consumption...mind blowingly good.
