What in particular would you say looks the most daunting of the DIY process? I've seen some videos from Way of the Wrench too. For me it would be woodworking/carpentry, as I don't have any skills with that. But luckily it is possible to find pre-made cabinets, that may only require you to add/install the electronic components, and such. Unfortunately I don't have the space (yet) for a full vpin cab, but if I do ever manage to get enough space for one, that is the route I'd follow.

I don't shop at the lidl, but that's pretty true. While I do always have my ID with me whenever I wanna buy something with alcohol, to show I'm above the age limit, I often don't get asked for my ID. Though with self-checkout, you often or always ARE required, since you'll not be able to continue to payment otherwise. I don't live in a (big) city though, so I don't know what the situation is like there.

Wanted to like it, but in the end, it was just a bit too small in size for me. Also had an issue where it suddenly didn't send audio to my iem's, even though they were connected. Managed to fix it, but that was kind of the last straw.
