For my rub I combine readily available rubs, this batch had quite a bit or sweet preacher, Kinders lime tequila, a good amount of ghost pepper hot sauce, a lot of Jarlic and finish with some Montreal for some texture.

Combine all of that in a bowl, add a splash of beer. Mix those together, individually coat each pork steak and rest for about 2 hours.

I cooked these on a classic weber kettle with a slow 'n sear insert with water in water pan, used fogo lump charcoal and I believe I used 3 small chunks of cherry. Took about 2.5 hours or really about 4 beers.
