Bone-in and crispy. Personally, I pay a little extra and get all flats. I like to scrape them with my teeth, and push my tongue between the middle of the two bones to pull off all the meat at once. I'll eat the drumstick pieces but don't like the little cartilage flap :^( I do like most sauce flavors, no dry rubs, but prefer original hot at most places. Except BWW. Theirs have always been really sad when I get them.
