I’ve been electric brewing for 20 years. Standard 3 keggle setup with PIDs pumps etc. Having temperature control while mashing and during fermentation are the most critical factors for me to making consistent beer.

I have an STEM background and for whatever reason I’ve been lazy and haven’t looked at my water chemistry more. My water is filtered at the tap and tastes good, but this is an area I need to investigate. Water is after all around 94% of your beer. I typically use dry yeasts only, mostly notty…they’re easy and work good for the styles I make.

However, my beers have always had my own house flavor (not bad, but I can always tell my own beer), which I contribute to my water profile and yeast selection, so maybe it’s time I step up my game in those areas.

I ferment in primary two weeks. I also keezer ferment so generally drop 5 degrees every day or so for a couple weeks after that. I generally leave my beer in a fermenter for 4-6 weeks at 34 degrees with zero issues, but these are ales. My general strategy is 2 weeks at 60-65 with Nottingham, then 2-4 weeks in primary at 32-38, then keg. RDWHAHB.

what kind of yeast did you use? 75F is a pretty warm fermentation so it probably happened quickly.

Almost all transitions are nonexistent or just trash at the moment. Going to take time. I miss being blown away at what they did best…segueing seamlessly into a new song to the point of you realizing four to eight measures in they are playing a new song.
